For today, in the spirit of tomorrow, I'd like to provide you with an incredibly easy and healthy sweet potato pie recipe that will wow everyone, as you prove that the holidays can be healthy ;)
{image}What you'll need:
- Three fairly large sweet potatoes
- Three tablespoons oil
- Half a cup hot soy milk
- Half a cup Fructose
- Egg replacer {equal to two eggs}
- Half a teaspoon sea salt
- Half a teaspoon vanilla
- 1/4 teaspoon nutmeg
- One unbaked pie crust
- Preheat oven to 350°F
- Steam the sweet potatoes until tender, peel & mash
- Mix the oil with the hot soy milk, then add to the sweet potatoes
- Beat until creamy
- Add the beaten egg replacer, fructose, sea salt, vanilla, & nutmeg to the sweet potato mix and mix well
- Pour the filling into the crust
- Bake for 30 minutes
