Vitamins A & C: Sweet Potato Pie

My dearest friends, thank you so very much for all of your kind emails and comments checking in. I adore you all so very much. Everything is exceptionally wonderful and I am grateful for all of you. I sincerely apologize to any of you whose email I may not have gotten to yet! It has been an incredibly busy time, and I know it has been far too long since I've last posted. I will try my best to post again as much as possible...I've missed you and blogging. However, for sure I will need to find a new rhythm because, daily is just a tad too much...for now ;)

For today, in the spirit of tomorrow, I'd like to provide you with an incredibly easy and healthy sweet potato pie recipe that will wow everyone, as you prove that the holidays can be healthy ;)


What you'll need:
  • Three fairly large sweet potatoes
  • Three tablespoons oil
  • Half a cup hot soy milk
  • Half a cup Fructose
  • Egg replacer {equal to two eggs}
  • Half a teaspoon sea salt
  • Half a teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • One unbaked pie crust
How to:
  • Preheat oven to 350°F
  • Steam the sweet potatoes until tender, peel & mash
  • Mix the oil with the hot soy milk, then add to the sweet potatoes
  • Beat until creamy
  • Add the beaten egg replacer, fructose, sea salt, vanilla, & nutmeg to the sweet potato mix and mix well
  • Pour the filling into the crust
  • Bake for 30 minutes
