If you like to bake, but avoid it because of the 'go straight to my thighs' ingredients there are a few vegan substitutes you might consider using.
{image}Earth Balance: All-natural with zero trans fat {take that, Fabio!}. It looks and tastes similar to butter and can be used the same way to bake, coat your pan, or spread on bread. In most recipes, you can also use grape seed oil as a substitute {and in a few, you can use applesauce} .
Ener-G Egg Replacer: For sure using power as an egg substitute in baking seems totally strange, but your taste buds won't notice, and your wallet will. One box of Ener-G Egg Replacer can replace 100 eggs. Simply blend with water, the rest of your ingredients and you'll be a cupcake making machine! Depending on your recipie you can use flaxseed, bananas, or tofu as eggless options.
Cream Substitutes: If you're looking for a free from sugar, soy, and gluten and a non-dairy cream, try MimicCreme. If you'd like to add a little oh la la to your your dish try Soyatoo whipped cream.
Nut Based Milks: Soy and rice are the most popular nut based milks, but there is also almond, coconut, and hemp as well.
Non-Dairy Chocolate Chips: Sunspire makes makes a little chip without the dairy.
Sweetner: We all know we should avoid sugar, and sugar substitutes. But, the sweet tooth has a mind of its own. Good news is there are some healthier, less processed options. Raw sugar, maple sugar or syrup, and agave nectar are some great options.

i learned today that you can also substitute ground flaxseed & water for eggs, too! tons of fiber & omega-3's! :)
